Our philosophy

We, that is Magnus Zimmermann as Chef de Cuisine and as Director of the Restaurant and Hotel, welcome you to our homepage! It's nice to have you here with us!

Before you get going and start looking for how we may be of service to you, let us tell you a few things about our general philosophy:

Although, we are both not descendants of old hotel or restaurant family dynasties or something, we have been active in this field with passion and all our heart throughout our complete professional career: we just love tending to and spoiling our guests and customers!
With the aquisition and re-opening of the Waldhotel Felsentor we fullfilled ourselves the dream of having our own business in our home region.
Part of this dream is also to pass on our knowledge and experience and to inspire young people with our love for the hospitality business. That's why we take in apprentices for a career in service or the kitchen-related professions.

In terms of the selection and preparation of the dishes on our menu we follow a regional and seasonal approach. This not only includes a smaller and regularly changing menu, but it also means we completely refrain from using artificial preservatives or flavor enhancers. We even produce our own seasoning and spice-mixes from basic ingredients!
In addition, we highly value the preparational concept of "sous-vide" as a way to preserve the nutrition and quality of our ingredients during the preparation of the meals, especially with regard to meat. 

We complement this approach of our Chef with the passion and love of our director for regional wine and other beverages. Meaning, we not only focus on regional and seasonal food, but we also offer a mainly regional wine and beverage menu in order for you to make the best of your experience when dining with us!
